Food Safety comes into focus at Food&HotelVietnam2015

First Food Safety seminar at the trade event aims to improve operational and safety excellence of commercial kitchens in Vietnam

Ho Chi Minh City, Vietnam, Jan 21, 2015 - (ACN Newswire) - "Food Safety in Commercial Kitchens: An ISO 22000:2005 Approach for Practitioners" seminar, will be held for the first time at Food&HotelVietnam2015. The event will take place from 21-23 April at the Saigon Exhibition and Convention Centre (SECC), Ho Chi Minh City, Vietnam.

Organised by the Lean Six Sigma Network, the seminar promises to support and encourage the application of food safety management systems and promote excellence in quality assurance for commercial kitchens in Vietnam. It will also provide a prominent and invaluable platform for in-depth discussions on important issues and challenges facing the industry.

ISO 22000:2005 specifies requirements for a food safety management system where an organisation in the food chain needs to demonstrate its ability to control food safety hazards in order to ensure that the food is safe at the time of human consumption. It is applicable to all organisations, regardless of size, involved in any aspects of the food chain and wish to implement systems that consistently provide safe products.[1]

Aiming to help local businesses meet these standards, the seminar will cover topics such as personal hygiene; cross contamination; food handling; storage; display and temperature control; cleaning; sanitation and pest control; food spoilage and waste; food poisoning, causes and prevention; and food law among many others.

According to statistics from Vietnam's Ministry of Health, food poisoning in cafeteria kitchens rose by 10 cases in the first six months of 2014, with the number of cases that affected 30 or more people increasing by 11.8% compared to the same period in 2013.[2]
