A Family Legacy Reimagined
Diamond Don’s pays homage to Don & John Salter’s original 1970s restaurant, Bitter Creek Grill, which earned acclaim and garnered Awards with its four celebrated locations across Arizona.
Now reimagined for a new era, the concept honors those roots while elevating the experience—bringing premium ingredients, vibrant design, and a live music-forward atmosphere to Downtown Mesa.

The restaurant’s name—Diamond Don’s—was coined by Velvet Cash, referencing Don Salter’s long-standing nickname and Saltmine’s “Diamond” reputation in the music industry. “Diamond Don’s is where community meets to eat in the presence of musical history ,” says Cash. “It’s built by artists, for artists, and anyone else who values culture, food, and creativity.”
Backstage Energy, Front-of-House Hospitality
The menu reflects dishes Don has personally prepared on site for chart-topping artists—including Lil Wayne, Alicia Keys, DMX, The Jonas Brothers, and many more—during spontaneous studio sessions, often late at night when no other kitchen was open.
